Recipe of the Week - 10/26/09

Artichoke Green Chile Cheese Appetizers


This recipe won second place in the appetizer
category at The Denver Chili Fest - after a new
judge was called in to break the tie for first! It
is an easy, guaranteed crowd-pleaser, and they
go fast. They look and taste like appetizers
at a catered affair.

I'm tempted to experiment with different
types of cheese next time I make this.


Artichoke Green Chile Cheese Appetizers

Ingredients:

1 13.5 oz can artichoke hearts, drained and chopped
6 green onions, chopped
1/2 cup diced green chiles
1 cup mayonnaise
2 cups grated cheddar cheese, divided
pre-baked mini phyllo shells


Preparation:

1. Reserve 2 tbsp of juice from artichokes. Sautee
   green onions in juice until soft but not browned .
   
2. In a mixing bowl, combine chiles and mayonnaise.
   Blend in artichoke hearts and onions. Fold in 1 cup
   of cheese.

3. Fill phyllo shells. Sprinkle with remaining cheddar
   cheese.

4. Bake at 350 degrees for 15 minutes or until heated
    through and cheese is melted.

 
Preparation time: 15 minutes
Total time: 30 minutes
Serves: 80
