Recipe of the Week - 12/14/09Anita's Simple Spaghetti Squash

I absolutely love this dish. It's easy
and incredibly tasty. I ate half
the
recipe as a one-dish meal.
I made it with a medium chile.
This dish has a very well-rounded
flavor, so it can be made with
mild to medium-hot. I don't think
I'd make it with hot chiles (or I'd
reduce the amount of chiles)
because it would probably
overpower the nice flavor.
Anita's Simple Spaghetti Squash
Ingredients:
1/2 spaghetti squash
2 tbsp butter
1 1/2 cups sliced onion
1 tsp Lawry's Seasoned Salt
2/3 cup diced green chiles
Preparation:
1. Cut the squash in half across the middle, then cut
the half in half (2 quarters). Scoop out seeds, then
place in a steamer on the stove. Steam the two
halves
at low heat for 30-40 minutes or until soft.
(You can also bake or microwave it.)
2. In the meantime, sautee the onion in the butter
at medium heat in a large skillet until onion is translucent.
Set aside until squash is done.
3. Use a fork to scoop the squash out of its shell
so that the strands separate.
4. Add the squash, seasoned salt, and chiles to the
onion and mix well. Adjust seasoning to taste. Sautee
another 5 minutes
on medium heat until well heated
and blended, then serve.
Preparation time: 45 minutes
Serves: ~ 4 - 6
