Green Chile Chutney
Unbelievably good and takes no time to make. It is a
wonderful balance of sweet-hot.
This recipe is
adapted from Southwest Slow
Cooking. The original
recipe calls for cream cheese rather than brie. I took it
to a party, and several people said, "This would be
really good with brie." The cream cheese was a bit bland
and the brie provides a much better balance.
INGREDIENTS:
2 cups diced green chiles
1 cup sugar
1/2 cup cider vinegar
1 teaspoon ground cumin
1/2 cup diced onion
1 8-oz wedge of brie
PREPARATION:
Put everything except the brie in a crockpot and cook
on low for 4-5 hours. Slice the brie in thin slices and
arrange on a platter in a circle and cover with the chutney.
You can also put the chutney in a bowl next to the wedge
of brie if you would prefer. Serve with crackers.
Preparation time: 5 minutes
Cooking time:
4-5 hours
Makes: about 3 cups

Christmas Chile and
Cheese appetizers
Easy and very versatile. I made this with a sharp cheddar
spread and took them to a Thanksgiving gathering where
a 9-year-old girl ate about half of them and raved about
them.
Very colorful and decorative. I created this with the
visual appeal in mind.
Note: You can make as few or as many as you want, so
quantities of all ingredients are variable. You can also get
as artistic as you want, so you can throw this together
quickly or turn it into a project.
INGREDIENTS:
1 8-oz package Boursin
(a cheddar or other cheese spread will do)
1 cup coarsely chopped green chiles
1 cup coarsely chopped roasted sweet red peppers
1 8-oz package round crackers
1 bunch parsley
PREPARATION:
Spread each cracker with cheese and cover with green chiles
and red peppers. Top each one with a sprig or two of parsley
and arrange on a plate.
This is an artistic opportunity
so knock yourself out.
Note: Looks better on a solid color plate.
Total Time: 15 minutes +
Makes: about 2 large plates
