Albuquerque Delight
This is a classic version of 7 layer dip, but of course
with a layer of green chiles. A never-fail appetizer and
easy to make.

INGREDIENTS:
1 16 oz. can of refried beans (with green chile and
    onion, if available)
1 package taco seasoning mix
3 avocados, mashed
2 teaspoons lemon juice
2 tablespoons minced onion
dash of garlic salt
1/2 cup sour cream
1 cup chopped green chiles

1/2 lb Monterey Jack cheese, grated
1/2 lb Longhorn Cheddar cheese, grated
2 ripe tomatoes, chopped
1 4 oz can sliced black olives, for garnish

PREPARATION:
Blend refried beans with taco mix. Spread into a 12x8x2 glass dish
or a 10-inch glass pie dish. Combine mashed avocados, lemon juice,
onion, and garlic salt and spread over bean layer. Add layers of sour
cream, green chiles, and cheeses. Garnish with tomatoes and olives
and serve with tortilla chips.

Preparation time: 15 minutes
Serves: 12

Chunky Guacamole
This is a very basic, simple recipe, easy to prepare. The bell pepper
adds a nice crunchiness. To make it especially colorful, use yellow
or orange bell pepper. This is the kind of recipe that I usually adjust the
proportions of the ingredients to taste.

INGREDIENTS:
1-2 large ripe avocados
1/3 cup green chiles
1 medium tomato
1 small onion (about 1/3 cup diced)
1 small bell pepper
Juice of 1/2 lemon
Salt to taste


PREPARATION:
Chop all ingredients fine. Do not mash. Mix together with the
lemon juice and add salt to taste. Serve as a dip or as a salad
with lettuce and corn chips.


Preparation Time: 15 minutes
Makes: about 2 cups
