Recipe of the Week - 6/28/10

Spicy Sweet and Sour Red Cabbage


This is a real taste treat and a dish I would
serve to company or take to a pot luck.
To shred the cabbage, I just take a big knife
or cleaver and cut it into thin slices, then I
turn it 90 degrees and cut it into about 1 inch
pieces. It's just like coarsely shredding.

I used a medium hot chile (Big Jims), but I think
any greenchile would work fine - just adjust how
much chile you use to fit your taste.

Spicy Sweet and Sour Red Cabbage

Ingredients:

1 medium head red cabbage (1 1/2 lbs)
(about 8 cups shredded)
1/2 cup water + 2 tbsp vinegar
4 slices bacon
1 cup chopped onion
1/4 cup brown sugar, packed
2 tbsp flour
1/2 cup water
1/4 cup vinegar
1/2 cup diced green chiles
1 tsp salt
1/4 tsp pepper


Preparation:

1. Bring the 1/2 cup water + 2 tbsp vinegar
    to boil in a large pot. Add the shredded
    cabbage, cover, and cook over medium
    heat for 20 minutes until cabbage is
    crisp-tender.
  
2. Fry bacon until crisp; remove and drain.
    Pour off all but 2 tbsp bacon drippings.
    Crumble or chop bacon into small bits.
   
3. Sautee onion in bacon drippings for about
    5 minutes or until soft. Stir in brown sugar
    and flour.

4. Gradually add water and vinegar while
    stirring and cooking. Cook about 5 minutes
    while stirring, until mixture thickens.

5. Add chiles, bacon bits, salt and pepper,
    mixing well. Add the bacon and sauce
    mixture to the cabbage, stir well and heat
    through.

6. If desired, garnish with extra bacon bits.
    Serve.

    
Preparation time: 30 minutes
Makes: 4-6 servings
