Denver Green Chili Recipe of the Week - 1/13/08

Southwestern Tabbouli


Flavorful and nutritious. This is based on my favorite
tabbouli recipe. It is quick and easy to make and a
hit with everyone who tries it. I suggest using mild
rather than hot or medium hot green chiles as I think
the flavors are very well balanced with the mild.


INGREDIENTS:
1 cup ala (cracked wheat bulgur)
1 1/2 cup boiling water
1 1/2 tsp salt
1/4 cup lemon juice
2 cloves garlic, crushed
1/4 cup olive oil
2 tomatoes, diced
1/4 cup diced mild green chiles
1 cup chopped cilantro
4 green onions, chopped

optional: lettuce and sliced avocado for garnish

PREPARATION:
1. Pour boiling water over bulgur, cover, and let sit 1 hour
2. Add remaining ingredients, stir well, and chill

Preparation Time: 10 minutes
Total Time: about 1:10
Makes: about 3 cups
