This is a tasty, interesting appetizer or side dish. I
like it fried to a cinnamon brown so it gets crusty on
the outside. The inside is soft and puffy.
Ingredients:
1/3 cup all purpose white flour
1/3 cup water
1 egg, slightly beaten
1/2 teaspoon baking powder
1/2 cup diced green chiles
1/4 cup whole kernel corn
2 tablespoons onion, finely chopped
Vegetable oil for frying (about an inch deep in pot)
Preparation:
1. In a bowl slowly add the water to the flour, stirring
constantly, to make a thin sauce. Add the remaining
ingredients, except the oil, and mix well.
2. Drop the batter by tablespoons into 360 degree oil
and fry until
brown. Remove and drain on paper towels.
Preparation time: about 20 minutes
Makes: 12 fritters
