Green Chili |
This is an adaptation of a recipe I watched Giada De Laurentiis
make on The Food Network. It is very easy, nutritious, and
infallible.
This recipe does not call for any specific measurements. When
it comes to how much cheese or chiles to use, just adjust for
how cheesy or chiley you want it.
Ingredients:
3 medium zucchini
1 tbsp olive oil
1/2 cup diced green chiles
1/2 cup parmesan cheese (about)
1 cup cheddar or Monterey Jack cheese (about)
1/2 cup milk
1/2 cup bread or cracker crumbs
salt & pepper to taste
Preparation:
1.Preheat oven to 350 degrees. Drizzle the olive oil on the bottom of a
9 X 9 baking dish.
2. Cut the ends off the zucchini and cut them lengthwise into about 1/4
inch slices.
3. Layer the zucchini, the chiles, a little salt and pepper, parmesan cheese,
shredded cheese, and
bread crumbs. After 2 layers, pour the milk over,
then continue layering. You should end up with 3 to 4 layers.
4. Bake for about 35-45 minutes, or until zucchini is soft and cheese
melted. (Prick with fork or knife to test.)
Preparation time: 15 minutes
Cooking time: 45 minutes
Makes: about 6 servings
