Green Chili |
This is tasty and infalliable. It can be frozen ahead of time. It's a
great dish for pot lucks and parties - sure to please nearly
everyone.
Ingredients:
1 tablespoon butter
1 1/2 cups chopped onion
3 garlic cloves, minced
1 lb ground beef
1 tbsp chili powder
1 1/2 tsp salt
1/2 teaspoon ground red pepper flakes
2 10 oz. cans cream of chicken soup
1 cup diced green chilies
18 corn tortillas, divided
2 10 oz. cans red enchilada sauce, divided
1 16 oz. can refried beans
4 cups Monterey Jack cheese, shredded
Preparation:
1. Preheat oven to 350 degrees and lightly grease a 13x9x2 baking dish.
2. Saute the onion and garlic in butter until soft, about 5 minutes.
3. Add ground beef, chili powder, salt and red pepper.
4. Brown the beef, breaking it up into small pieces, and drain.
5. Stir in the soup and green chiles and set aside.
6. In a bowl, mix the refried beans with 1 can of enchilada
sauce.
7. Line the dish with 6 of the tortillas, then spread with the
bean mixture.
8. Sprinkle 1 cup of shredded cheese evenly on top.
9. Layer 6 more tortillas, then spread meat mixture on top.
10. Sprinkle 1 cup of shredded cheese evenly on top.
11. Layer the remaining 6 tortillas, then spread the second
can of enchilada sauce evenly on top.
12. Sprinkle remaining 2 cups of cheese evenly on top.
13. Bake for 25 minutes, until hot and bubbly.
14. Garnish with olives, sour cream, shredded lettuce, if
desired.
Preparation time: 30 minutes
Cooking time: 25 minutes
Total time: about 1 hour
Makes: about 8 servings
