Green Chile Stew

A very easy crockpot recipe. Very flexible. This is very meaty and
potatoey. You can easily reduce either. If you like it a bit creamier
and sauce-like, you can add another can of cream of chicken soup.
This is a good basic recipe that lends itself to further experimentation.

I made it with medium hot chiles and it was fairly spicy.


Ingredients:
4 cups diced green chiles
4 cups diced potatoes
4 cups diced or shredded turkey or chicken
1 can cream of chicken soup + 1 can water
1 10 to 15 oz can diced tomatoes
1 tbsp vinegar
1/2 tsp oregano
1/2 tsp ground cumin
1/2 tsp salt or to taste
shredded cheese and cilantro for garnish


Preparation:

1. Throw everything in the crockpot and cook on low for 4-5 hours.

2. Serve in bowls and top with cheese and cilantro.

Preparation time: 15 minutes
Cooking time: 4-5 hours
Makes: about 8 servings
