I often use the Costco brand of Italian meatballs
(Kirkland)
for quick and easy dinners, especially
meatball subs (which my 12 year old son loves).
They make a good base for many meat dishes.
They come precooked and frozen in a large bag
- you can just grab a handful or a bucketful for
a small or large dinner in a flash.
This time I put together a very quick meal that
everyone enjoyed with a simple combination of
mushroom soup, meatballs, vegetables and
chipotle chiles in adobo sauce.
Ingredients:
about 20 Kirkland Italian meatballs
1 can cream of mushroom soup
1 can of water or milk
1 cup whole roasted green chiles, cut in strips
(diced if you prefer)
1 red bell pepper, cut in strips
1 small onion, cut in strips
1 tbsp oil
about 3 chipotle chiles in adobo sauce, minced
(or to taste)
1 cup rice, uncooked
Preparation:
1. Cook the rice per the directions (boil in about 2 cups water).
2. While the rice is cooking, in a skillet or wok saute the vegetables
in the
oil
until
soft.
3. Add the cream of mushroom soup and gradually add the milk
or water.
4. Add the chipotle peppers to taste.
5. Heat the meatballs in the microwave and add to the soup and
vegetable mixture.
6. Serve the meatballs over the rice.
Preparation time: 10 minutes
Cooking time: about 20 minutes
Serves: about 4
