Fire 'N Rice Summer Salad
(exceptional for pot lucks!)

I just invented this dish yesterday to take to the Hot and Spicy
Meetup's annual Hot Luck event. It got an enthusiastic
reception all around. This probably ranks in my top 5 green
chile dishes of all time. For me, this is a truly memorable dish.

This is one of those dishes that is easy to prepare, everyone
likes it, yet it is out of the ordinary. You can be absolutely sure
than no one will show up with anything similar.

I used hot green chiles in this, but only a small amount. I got
exactly the effect I wanted - a pronounced heat, but it was
balanced with the full flavor of the salad. The resulting dish is
medium hot. If you want to serve this to people who can
tolerate very little heat, I would use mild green chiles, but
double the amount. I think that if you just substitute mild
for the hot green chiles, you will not be able to taste them at
all. Fortunately, this is a dish where you can taste as you
go along and make adjustments.

I also used basmati rice, my overall favorite and doubled the
recipe .

Ingredients:
1 cup rice, uncooked
2 cups water
1/4 tsp salt

Dressing:
1/4 cup olive oil
1/8 cup balsamic vinegar
1/4 tsp Dijon mustard
1/4 tsp salt
1 clove garlic, minced


1/4 cup medium hot or hot diced green chiles
2 green onions, chopped
1 small red, yellow, or orange bell pepper chopped (or 1/2 large)
1 small green bell pepper, chopped (or 1/2 large)
1 cup fresh cilantro, chopped

Preparation:

1. Cook the rice in the salted water about 30 minutes, or until done.
Set aside.

2. In the meantime, put all dressing ingredients in a jar. Put the lid
on and shake vigorously, then pour over the cooked rice.

3. Add the green chiles, onions, bell peppers, and cilantro.

4. Mix well, chill, and serve.

Note: You can add all ingredients except the cilantro while the rice
is still warm. The cilantro will rapidly wilt and cook in the heat.

Preparation time: 15 minutes
Cooking time: about 30 minutes
Serves: about 6
