Recipe of the Week - 10/19/08Classic Bean Dip |

Is anyone else glued to the World Series?? For me, Tampa Bay has added
some real excitement to the event. I just pulled a bushel of Big Jim
chiles out of the freezer and peeled, seeded and packed them up for
freezing while watching game 2. This weekend should be World Series
party time! What do you need for a great World Series party besides
green chili?? You absolutely gotta have BEAN DIP!!! If I were giving a big
World Series party, I'd buy one of those giant 10-lb cans of refried beans
from Costco and make a ton of this!
I made this with Hatch Mild chiles. I would prefer it made with a medium-hot
chile like Big Jim, Sandia, or Mosco. I also think it would be great made
with
Dynamites.
I ended up making this my entire dinner!
Classic Bean Dip
Ingredients:
1 16 oz can refried beans
1 cup shredded Monterey Jack or Cheddar cheese
1/4 cup salsa
1/2 cup diced green chiles
2 tbsp minced green onions
1 1/2 teaspoons chili powder
1/8 teaspoon ground cumin
1/4 cup chopped cilantro
minced jalapenos to adjust heat
tortilla chips
Preparation:
1. Mix all ingredients except jalapenos and chips in a pot or
microwaveable bowl.
2. Heat thorougly on stove or in microwave, stirring several
times to blend.
3. Adjust heat with jalapenos to taste.
4. Let sit at least an hour (ideally) to blend flavors.
5. Serve with chips.
Preparation time: 5 minutes
Serves: about 4
