Denver Green Chili

Guacamole Supreme

This is a very easy yet rather elegant form of
guacamole. With the crabmeat in it, I found myself
eating it straight. I think this is a very nice variation -
we're so used to typical quacamole, it's become a
standard snack.

Guacamole Supreme


Ingredients:

2 - 3 large avocados (about 1 cup mashed)
1/4 cup fresh lemon juice
1/4 lb mock crabmeat
1/2 cup sour cream
1/2 cup diced green chiles (or to taste)
1/2 cup chopped fresh cilantro (or to taste)
2 tsp grated onion
1/2 tsp salt
1/4 tsp cayenne
tortilla chips

Preparation:

1. Halve and pit avocados; scoop out meat into a bowl.
2. Add lemon juice and mash until almost smooth.
3. Stir in remaining ingredients except tortilla chips. Add more green chiles
and/or cilantro to taste.
4. Bury avocado pit in center, cover with plastic wrap, and chill 1 to 4 hours.
(The flavors blend nicely if allowed to sit at least an hour.)
5. Remove avocado pit, garnish with crabmeat and cilantro, and serve
with tortilla chips.


Preparation time: about 10 minutes
Makes: about 4 cups
