Denver Green Chili

Peppery Pork Sandwiches

It's football season!! This is a great addition to a football
party. I made these using the little tiny buns/rolls - these
were about the size of White Castles. That way you get
at least 2 dozen. These are shredded pork very much
like Southern-style barbeque. I grew up on North Carolina
barbeque, and there is nothing like it. This is not that (as
it has tomato in it), but it's really good!

If you can't find hot paprika (and it's not easy), use regular
paprika and add jalapeno or more cayenne. This is spicy,
but if you like it really hot, add jalapeno. I made it with
Big Jim chiles and did not use jalapeno.

I made this in a crock pot and cooked it for about 5 hours
on low.

Peppery Pork Sandwiches


Ingredients:

1 1/2 cups coarsely chopped onion
1 2 to 1 1/2 lb boneless pork shoulder roast
1 tbsp. hot paprika
2 15 oz cans chunky chili-style tomatoes
1 cup diced green chiles
2 tsp. dried oregano, crushed
1/2 tsp cayenne
2 tbsp. vinegar
1 tsp. black pepper
1/4 tsp salt
2 dozen small rolls
optional: 1 tsp to 1 tbsp diced jalapeno

Preparation:

1. Preheat oven to 325 degrees.
2. In a 4-quart covered pot, spread onion on the bottom.
3. Mix paprika and cayenne and spread evenly over roast, then
place roast on top of onion.
4. Mix undrained tomatoes, chiles, oregano, vinegar, black
pepper, and salt and pour over roast.
5. Cover and bake for 3 hours or until roast is very tender.
6. Remove pork to cutting board, leaving mixture in pot.
Using 2 forks, pull pork into shreds.
7. Pour the juice off the tomato/chile mixture and skim fat
off the juice , then add shredded meat and juice to the
tomato/chile mixture. Stir until combined.
8. Spoon mixture onto rolls.

Alternate cooking method: Prepare exactly as directed,
except put onions and roast in a crockpot (3 1/2 quart or
larger) and cook on low for 4 1/2 to 5 hours.


Preparation time: about 20 minutes
Cooking time: 3 to 5 hours, depending on cooking method
Makes: about 2 dozen little sandwiches or 8-9 larger sandwiches
on french rolls
