Recipe of the Week - 12/7/08Potato, Parmesan & Green Chile Gratin |

This recipe came about from a request from a subscriber to the Recipe
of the Week. I had to work at duplicating it, but it is really good! It's
not low calorie, but what do you expect at holiday time?
Potato, Parmesan, and Green Chile Gratin
Ingredients:
4 lbs medium potatoes (about 6-8 or so)
1 1/2 tsp salt
2 cups half and half
3 tbsp. butter, softened
2 cups diced green chiles
1 1/2 cups Parmesan or Romano cheese
1 lb goat cheese, thinly sliced
Preparation:
1. Preheat oven to 350 degrees.
2. Peel potatoes and cut into 1/8-inch slices. Divide into 5 equal
piles.
3. Dot bottom of a 13 X 9 inch baking dish with half of the butter
and pour in 1/3 cup of the half and half.
4. Layer potatoes in baking dish, 1 pile per layer, sprinkling with
1/4 of salt (a bit less than 1/2 tsp),
spreading
1/3
cup half and half,
1/4 of parmesan, 1/4 of goat cheese, and 1/2
cup green chiles
between layers.
5. Drizzle remaining half and half over potatoes and dot with
remaining butter.
6. Bake, uncovered, until potatoes are very tender and top is
browned, about 1:45.
Preparation time: about 30 minutes
Cooking time: 2 1/2 hours
Makes: 8 servings
