I received a request for this recipe this past week, and found
a very simple,
yet incredibly good one. This is very flavorful,
but mild enough that everyone
will really like it. This is a
guaranteed hit. Of course, you can increase
the green chiles
or hot sauce (I used Tabasco) to make it hotter.
This recipe can actually be served as a dip at room temperature
or chilled
and shaped into a ball. I liked it as a dip served with
a fresh French baguette
sliced into think slices. As a ball, you
can roll it in anything you like -
pecans, pinon nuts, diced red
bell pepper, fresh cilantro, whatever.

1/2 cup chopped pecans (or red bell pepper, cilantro, whatever you wish to
coat it with)

1. In bowl, combine all ingredients.
2. Blend well.
3. Place mixture on wax paper or plastic wrap.
4. Wrap and form into ball.
5. Chill for several hours.
Serve with crackers or a French baguette.
