Tomato & Avocado Salsa

This is a bit different from most salsas. The celery makes it
particularly crunchy and the vinegar and olive oil give it
a robust flavor. This is sure to get snarfed up at parties.

I used Big Jim chiles, a medium hot green chile. If you are
using mild green chiles, you may want to add a bit of minced
jalapeno or serrano to up the heat a bit.


Tomato and Avocado Salsa

Ingredients:

2 cups diced peeled tomatoes (about 4 medium)
1/2 cup minced red onion
1/2 cup minced celery
1/4 cup minced green pepper
1/4 cup diced green chiles
2 tbsp wine vinegar
2 tbsp olive oil
1 tsp salt
1 tbsp sugar
1/2 tsp ground rosemary
1 avocado, diced
cilantro or parsley for garnish

Preparation:

1. Mix all ingredients in a bowl and chill for several hours..

Preparation time: about 20 minutes
Makes: 2 1/2 cups
