Recipe of the Week - 3/15/09Chile, Cheese & Avocado Sandwich

This is one of those simple meals I prepare for myself
and friends all the time. It's always really good and has
nearly infinite variations
Chile, Cheese & Avocado Sandwich
Ingredients:
2 slices whole grain bread
2 slices American cheese
1/2 avocado, sliced
tomato slices
2 green chiles, peeled & seeded
optional: 1/4 cup (about) alfalfa sprouts
Preparation:
1. Cut open each chile and cut into
pieces to fit bread. (or use diced chiles instead)
2. Place 2 slices bread on a plate and cover each
with a slice of cheese and a chile
3. Microwave on high for 30 seconds to 1 minute,
or until cheese melts.
4. Top one side with the tomato, avocado and alfalfa
sprouts, then top with the other side
5. Enjoy! This is yummy!
Variation: I like to use pita bread and fill it
with shredded cheese, diced green chiles, avocado,
alfalfa sprouts and diced tomatoes.
Preparation time: about 5 minutes
Serves: 1
