Recipe of the Week - 3/22/09Potato, Sausage, & Green Chile Soup

This is super easy, flavorful, and satisfying. I like to
soup mixes like Bear Creek Potato Soup Mix around just so
I can whip up homemade soup in a pinch. Green chiles blend
right in with this soup.
I used the kind of sausage that comes in a 1-lb roll. I would
tend to use mild sausage and mild or medium hot chiles, but
any combination works well.
Potato, Sausage, & Green Chile Soup
Ingredients:
1 pouch Bear Creek Potato Soup mix
1/2 lb Italian sausage
(I used King Soopers Hot Italian)
1/2 cup diced green chiles
optional: 1 cup diced celery
Preparation:
1. Prepare soup mix per package directions, adding
celery (if desired) to the water before boiling.
2. Cook sausage (in skillet or microwave) and
crumble into bits.
3. Add sausage and green chiles to soup, and you're done!
Note: You can add broccoli, carrots, whatever, if you want
to turn this into a hearty stew. Very flexible.
Preparation time: about 20 minutes
Serves: 4
