Recipe of the Week - 3/29/09Meatless Meatloaf with Green Chiles

This "meatloaf" has a wonderful texture and flavors - ideal
to serve when your guests include vegetarians.
Meatless Meatloaf with Green Chiles
Ingredients:
1 cup soybeans, cooked and mashed
1/2 cup pecans ground
1 1/2 cup chopped onion
3/4 cup chopped carrots
1/2 cup ketchup
1 (4 oz) can mushrooms, drained
1 cup oatmeal
1 1/2 tsp salt
1/2 tsp basil
1/4 tsp black pepper
3 eggs
2 tbs chopped parsley
1 tsp. oregano
1 tbs olive oil
sauce:
1/2 cup diced mild green chiles
1 8 oz. can tomto sauce
Preparation:
1. Mix all ingredients (except for sauce) together. Place in a greased
loaf pan.
2. Mix the green chiles and tomato sause together and pour over top
of loaf.
3. Bake at 350 degrees for 50 minutes.
Preparation time: about 1:15
Serves: 6
