Recipe of the Week - 5/24/09Santa Fe Hollandaise

This started out as a breakfast sandwich recipe.
Then I found myself putting
the sauce - much like
a hollandaise with a green chile kick - on everything.
I put it on cheeseburgers,
artichokes, potatoes.
So I'm publishing the sauce first, sandwich second.
This is very easy and quick to make. And not as
fattening as mayonnaise. Plus I used light
mayonnaise.
I'm not sure where else I will use it,
but I still have some, so I'll be trying it on other dishes.
Santa Fe Hollandaise
Ingredients:
1/4 cup mayonnaise
1/4 cup plain yogurt
1/4 cup diced green chiles
1 tsp Dijon mustard
1 tsp lime juice
Preparation:
1. Blend all ingredients in a blender until smooth.
2. Refrigerate until time to serve.
Preparation time: 5 minutes
Makes: about 3/4 cup

Avocado Breakfast Sandwiches
Ingredients:
4 large eggs, cooked as desired
1 avocado, thinly sliced
4 slices whole
grain bread, toasted
1 recipe Santa Fe Hollandaise (as above)
Preparation:
1. Heat Sante Fe Hollandaise in a microwave for
about 30 seconds and stir.
2. Layer eggs and avocado on toast, then drizzle
with the Santa Fe Hollandaise.
Preparation time: 5 minutes
Serves 4
