Denver Green Chili

I recently started home delivery of high quality organic meat & frozen
foods - at the same cost as grocery store prices. I'm delighted with it - no
more hours of cutting the fat off of pork when making green chili. It's

Gambler's Chili
2008 World Champion


Green chile season is almost here!
And chili cookoffs will be cropping up.
The next ICS (International Chili Society)
sanctioned cookoffs are in Winter Park
on August 22 - 23. I judge these every
year. Interested in entering your special

Never entered before? You might try this
World Champion Green Chili recipe from
2008 to see what they look for. It is typical
of the winners - medium hot, thick, very
meaty. There is relatively little variation
between winners.

When I made this, I used Safeway's brand
of green chile salsa - it's one of my favorites.
I also used fresh cilantro insted of dried.

You can buy green chile powder at
The Chili Guys at 55th & Federal, 303-455-4030.
Even if you leave the green chile powder out,
you'll find this recipe is very good.

So far, my favorite of all the World Champion
recipes (with respect to easiest & really good)
is the 2006 World Champion.

Gambler's Chili

Ingredients:

2 lbs. pork tenderloin, cubed
1 cup coarsely chopped onion
14 oz. chicken broth
10 oz can or bottle of green salsa
2 1/2 cups diced green chiles

Spice Mix Ingredients:

3 tsp garlic (minced or mashed)
2 ½ Tbsp chicken base (bouillon)
1 tsp celery salt
1 Tbsp flour
2 tsp oregano
1 Tbsp cumin
3 Tbsp diced jalapeno pepper
1 Tbsp dried cilantro (Pendries powder
    or 3 Tbsp fresh finely chopped)
1 Tbsp green chili powder
*Tabasco (green)
*Salt Salt to taste


Preparation:

1. Brown pork and drain
2. Add onion & chicken broth, then simmer
    1 hour, stirring often to avoid sticking
3. Add spice mix and green chili salsa, then
    simmer 1 hour
4. Add diced green chiles, then add salt and
    tabasco to taste
5. Simmer another hour and serve.

Preparation time: about 1/2 hour
Cooking time: 3 hours
Makes: 2 1/2 quarts
Serves: about 10
