Recipe of the Week - 8/2/09

Calico Cabbage



Cabbage and green chiles go really well
together. I'll bet I can come up with
countless cabbage and green chile dishes.

This is a relatively mild, but flavorful dish.
I made it with medium hot chiles (by
accident - some of my labels rubbed off)
and I would definitely use mild chiles to
not overpower the other flavors.

In the future I'm going to experiment with
adding a bit of onion and sour cream to
this. It has a lot of potential for variation.


Calico Cabbage

Ingredients:

1/2 large head cabbage, shredded or chopped
1 large carrot, julienned (I used a vegetable peeler)
1/2 cup cream cheese, softened
2 tbsp milk
1/4 cup mild diced green chiles
1/2 tsp celery seed
salt and pepper to taste

Preparation:

1. Heat 1/2 inch salted water in covered pot
    to boiling. Add cabbage and carrot.

2. Cook, covered, for 10 to 15 minutes or
    until tender.

3. Mix cream cheese and milk, then stir in
    celery seed.

4. Drain cabbage, then blend well with
    cream cheese mixture. Add salt and
    pepper to taste, then serve
   
Preparation time: 20 minutes
Serves: 4
