Papaya Chile Rice



I like the combination of spicy and fruit, and papaya
is especially good for this.

This is an easy to prepare dish, with a well-rounded
taste and the papaya to enhance it with some
interest and fresh sweetness. My favorite place to
buy papaya is Rancho Liborio, which has about four
locations in the Denver area. The most central is
on Federal just south of I-36. I might also try other
fruits, such as peaches, in this.

Papaya Chile Rice

Ingredients:

2 1/2 cups water
1 cup lime juice (or lemon juice)
3 1/2 cups long grain white rice
1 cup minced onion
1 1/2 cups diced papaya
1 cup diced green chiles
1 cup chopped cilantro
1/2 tsp salt (or to taste)

chopped fresh cilantro as garnish.

Preparation:

1. Bring water, lime juice, and salt to
    a boil.
   
2. Add rice and onion and simmer on low until
    done, about 25 minutes.

3. Stir in chiles, papaya, and cilantro, cover, and
    let sit for 5 minutes. Garnish with cilantro and
    serve.
 
Preparation time: 40 minutes
Serves: 8 - 10
