Southwestern Potato Spinach Melange



Want to know what my current basic dish is
that I produce infinite varieties of??? Potatoes,
onions, bacon (or ham, maybe chicken), and green
chiles sauteed up with other vegetables or spices.
This is always good, no matter how you vary it.
I often wrap something like this in a tortilla to
make a burrito. I might add lettuce, avocado,
salsa, whatever.

This particular variation has a distinctly different
flavor because of the addition of spinach. The
spinach really alters the character. I tend to
serve this as a side dish or a whole meal in itself.
The sour cream seems important for blending
the flavors and adding a robust flavor to the
dish.

If you use mild green chiles, you may barely
taste them as the spinach is a fairly strong
taste. Medium hot chiles will add a noticeable
heat, though. You may want to adjust the
green chiles to taste at the very end.

Southwestern Potato Spinach Melange

Ingredients:

6 to 8 strips bacon
1 1/2 cup diced onion
2 cloves garlic, minced
6 cups peeled, diced potato
1 cup mild or medium hot diced green chiles
1 10 oz package frozen spinach, thawed & drained
1/2 cup sour cream
1 tsp salt, or to taste

Preparation:

1. Place potatoes in covered pot with 1-2 inches
   water, bring to boil, and simmer covered for 30
   to 45 minutes or until soft. Often I put potatoes
   and water in a covered casserole and microwave
   for 15 to 20 minutes instead.
   
2. Meanwhile, fry bacon in 12-inch skillet until cooked
   but not crisp. Remove bacon and set aside, leaving
   the fat in the pan .
 
3. Sautee the onion and garlic in the bacon fat until
    soft, then add the drained potatoes and mix well.
   Cook and stir over medium heat for 5 minutes to
   brown potatoes a bit, then stir in the green chiles.

4. Chop or tear the bacon into small pieces and stir
   into the potatoes, then add the salt to taste.
 
5. Stir in the spinach and sour cream to blend thoroughly,
   then adjust salt to taste. Heat thoroughly and serve.
   You may want to put this in a casserole, top with cheese
   and heat in oven or microwave before serving.
   
 
Preparation time: 20 minutes
Total time: 30 minutes to an hour, depending on if
microwave is used
Serves: 8
