Avocado Green Chile Salad Ring


This picture doesn't do justice to this dish - it should
be in an elegant ring. I separated the mixture into
3 parts before adding the chiles and put mild chiles
into one part, Big Jims into the second, and Dynamites
into the third. Then trying to get them into the mold
but still separated was just too hard.

This is an elegant, creamy, and nice-flavored dish.
I found I like the medium hot best. With the mild
it was hard to even tell there were green chiles.
If I were making it with mild I would increase the
amount of green chiles by 25-30%.

Now the Dynamites were another story. I ate about
a half cup of this with Dynamites straight. About 5
minutes later, my tongue went numb and I got the
chills and a stomacheache. Some people are Dynamite
people and some aren't.

I would definitely garnish this with diced tomatoes,
shrimp, cilantro, whatever and it would make a good
potluck dish. Also, for those who are vegetarian, you
can eliminate the gelatine and the 1 1/4 cups water.
Then gradually blend in water (maybe a half cup?)
until you get the consistency you want. You will have
a dip.

Avocado Green Chile Salad Ring

Ingredients:

1 envelope unflavored gelatin
2 tbsp lemon juice, divided
1 heaping cup avocado, mashed
3/4 cup diced medium hot green chiles
1/2 cup sour cream
1/2 cup mayonnaise
salt and pepper to taste
Fresh tomatoes or fresh shrimp

Preparation:

1. Lightly oil 1 1/2 quart ring mold.
   
2. Soften gelatin in 1/4 cup cold water, add 1 cup
   boiling water and 1 tbsp lemon juice, and stir
   until dissolved. Chill until slightly thickened.
 
3. Mash avocado and put through sieve.   

4. Blend sour cream with mayonnaise and add to
   avocado alternately with lemon juice and green chiles.
 
5. Add seasonings to taste and combine with gelatin.
   
6. Pour into prepared ring mold and chill until firm.

7. Unmold onto serving dish covered with greens. Fill
   center with diced fresh tomatoes or fresh shrimp.
   
 
Preparation time: 20 minutes
Total time: 1 1/2 hours
Serves: 8
