Cilantro Green Chile Dip
I adapted this from a recipe for "Cilantro Salsa", but I
can't bring myself to call it salsa. I'm sorry - this is just
not salsa. It is a dip!
The recipe suggested serving it with chicken, and it
would be good with chicken. But it actually reminds me
of a Southwestern version of spinach dip. I would
serve it just like spinach dip, maybe with a crusty
French bread. Or it would be good with tortilla chips.
The cilantro adds a nice freshness, and the heat of
the chiles makes it hard to resist. It looks like
spinach dip with pimentos, has a texture like
spinach dip, but sure doesn't taste like spinach dip!
Ingredients:
8 oz. sour cream
1/2 cup mayonnaise
1 cup cilantro, chopped fine
1/8 tsp. garlic salt
1/2 cup diced green chiles
1 jar (3 oz.) pimentos, diced
Preparation:
Blend all ingredients and chill well. Serve as a dip with
vegetables, bread, tortilla chips, or even a topping on
baked potatoes.
Preparation time: 5 minutes
Makes: 2 cups
