Anita’s Green Chile Hash
I always have these ingredients and often make this on a whim. Everybody raves about it!

INGREDIENTS:

5-6 potatoes, peeled and diced
1 tbsp olive oil
2 cloves garlic, minced
1 cup onion, diced
4-6 green chiles, diced (mild, hot, or both – your preference)
½ cup water
salt & pepper to taste

PREPARATION:
Throw all ingredients in a very large skillet with a lid. Cook at moderately high heat for 5 minutes, then reduce to medium-low and let simmer for 25 minutes. Add salt & pepper to taste.

Note: If you like your hash to have more of a fried taste, you can increase the oil to as much as ¼ cup. If you are looking for low-fat dishes, I have made this with no oil at all and it’s still really good.

I have also added bell pepper, ham, sausage, peas – use your imagination. You can also add curry powder and turn it into a curry.

Prep time: 15 minutes
Cooking time: 30 minutes
Total: 45 minutes
