Red and Green Pepper Cream Cheese Dip

This dip is super-easy to make, festive, yummy, and fattening (oops! scratch that). Great for a holiday party and easy to scale up for a large group or down for a gathering of a few friends. Serve it with crackers, tortilla chips, veggies, whatever. It’s also good with or without either parsley or cilantro finely chopped and blended in. I made it with medium-hot green chiles; some people will prefer hot. You can always add more chiles to taste.

Ideally you want to make it an hour or two before serving. If you make it a half day or a day ahead of time, you’ll find the red peppers “bleed” into the dip and it gradually turns pink or salmon colored. Still tastes wonderful, just doesn’t look as Christmasy.

I’m planning to try some variations on this recipe – my next experiment will be to stir in about a cup of diced smoked salmon. I already know it will be a winner.

Ingredients
  • ½ cup Heluva Good! Roasted Garlic & Caramelized Onion Dip (substitute onion dip if not available)
  • 1 8-oz package cream cheese
  • 1 cup diced fire roasted red bell pepper (from a jar or can)
  • 1 cup diced green chiles
  • ¼ tsp ground white pepper
  • optional: ½ cup minced fresh parsley or cilantro
  • garnish: fresh parsley or cilantro, additional diced roasted red bell pepper and diced green chiles
Instructions
  1. In a large bowl, blend the Heluva Good! dip (or onion dip), cream cheese, red bell pepper, green chiles, and white pepper.
  2. If desired, stir in the minced parsley or cilantro.
  3. Cover and refrigerate until ready to serve (ideally within 2 hours).
  4. Spoon into serving bowl, garnish with parsely, cilantro, and/or addtional red peppers and green chiles, and serve with veggies, chips, or crackers.
