Classic Pork Green Chili with Tomatillos

This classic recipe by Brian Green won 2nd place at the Denver Chili Fest a couple weeks ago. Personially, recipes like this are my favorites – lots of pureed tomatillos, several pounds of green chiles, plenty of garlic and onion, bacon to add a perfect special flavor, and very little in the way of spices.

Some people like lots of seasoning in their green chili, but recipes like this let that wonderful roasted green chili flavor stand out.

This is easy to make and a guaranteed hit. Enjoy!
