Vail
Los Amigos at the base of the lift at Lion’s Head had awesome green chili – but far from traditional.  It was thick, chunky, meaty, and plenty spicy, but did not look or taste like any other green chili I’ve had. Note: I’ve heard their lodge at mid-mountain has awesome green chili.
Minturn
Just 2 miles west of Vail, Minturn is barely bigger than a rest stop, but people travel from miles around for the green chili at The Turntable restaurant.  The Turntable is a funky old-style diner, but has a loyal following due to its green chili and awesome breakfast burritos.
Steamboat Springs
Taqueria Azteca has by far the best green chili out of about a dozen Mexican restaurants in Steamboat.  Eat in or carry out – this place is as casual as they come.
