- 2 cups sour cream
- ½ cup fresh cilantro leaves, packed down
- 1 medium jalapeno (1 to 1.5 oz)
- dash salt
- Remove stem, veins, and seeds from jalapeno and dice it.
- Dump the sour cream, cilantro, jalapeno and salt into a blender or food processor and pulse till nearly smooth. It will still look a bit speckled.
- If desired, adjust amount of cilantro and jalapeno to taste.
- Serve on soups, eggs, Mexican dishes, whatever.
- Store in sealed container in fridge; keeps for several weeks.
