Green Chile Feta Chicken Salad

Ingredients
  • ½ cup crumbled feta cheese
  • ¼ cup mayonnaise
  • ¼ cup medium hot diced green chiles, or to taste
  • 1 cup rotisserie (or leftover) chicken, diced
  • Cilantro for garnish
Instructions
  1. In a bowl, stir together the feta cheese, mayonnaise, and green chiles.
  2. Stir in the chicken; if desired, add more green chiles to desired heat and taste.
  3. Garnish with fresh cilantro; stir into the salad if desired.
  4. Serve as a main dish, on sandwiches, in salad, whatever. Keeps in fridge up to 4 days.
