Cheese Chile & Bacon Dip

My absolute favorite dip recipe! It's just full of fabulous flavor ... plus quick & easy to make. Perfect for those New Years Eve parties, or for game day parties. This can be made with mild chiles, but I prefer hot. The Select New Mexico chiles add a nice chunky texture.
Ingredients
  • 1 cup mayonnaise
  • 1 8-oz package cream cheese
  • 1½ cups shredded cheddar/jack mix cheese
  • (or use half sharp cheddar and half Monterey Jack)
  • 2 green onions, finely chopped (or ⅓ cup chopped onion)
  • ½ cup diced green chiles (ideally Hot Select New Mexico)
  • ⅛ tsp smoked paprika
  • 8 slices bacon, cooked & crumbled
  • 8 Ritz crackers, crushed
Instructions
  1. Blend mayonnaise, cream cheese, shredded cheese, green chiles, onions, and smoked paprika in a microwave safe bowl. Microwave for 1½ minutes.
  2. Remove, stir in half the bacon, and microwave for another minute or until hot and melted throughout.
  3. Top with crushed Ritz crackers and the remaining bacon. Serve with Ritz crackers or tortilla chips.
