Chipotle Crema

Ingredients
  • 1 cup sour cream
  • 1 tsp lime zest (from about ½ medium lime)
  • 1 tbsp lime juice (from about ½ medium lime)
  • 3 tbsp chipotle adobo sauce (from canned chipotles)
  • ~½ teaspoon kosher salt or to taste; saltiness can vary by brand
  • Minced chipotles (from the can) to increase heat level to taste
Instructions
  1. In a medium bowl, whisk all ingredients together until smooth: lime juice and zest, chipotle adobo sauce, and kosher salt.
  2. Note the addition of minced chipotles if you want to increase heat level. (In photo, it is without them and is fairly mild.)
  3. Set aside (refrigerate if making well ahead of time).
  4. Serve over meat, eggs, potatoes, or whatever. Enjoy!
