Chile Cheese Wontons

Fabulous crowd pleaser, tasty, crunchy and a little hot and spicy.
Ingredients
  • 1 8 oz package cream cheese (room temperature)
  • 3 tablespoons sugar
  • 1 stick imitation crabmeat (or ¼ cup crab meat)
  • 1 green onion
  • ¼ cup diced green chiles
  • wonton wrappers (should be available at any grocery store - you may have to ask to find them)
Instructions
  1. Pour 2 to 3 inches of oil in a deep fryer or pot with a candy thermometer. Set to 375 degrees or medium high heat.
  2. Mince the crab and the onion.
  3. Mix the cream cheese, crab, onion, and green chiles and blend thoroughly.
  4. For each wonton, take a wonton wrapper, dip it in water, then scoop about a rounded teaspoon of the cheese mixture onto the center of the wrapper. Pinch the corners of the wrapper together in the center so it holds an x shape. Do not seal - you want to see the cheese in each of the 4 corners. (The oil getting in there gives it the texture.)
  5. Assemble about 6 wontons at a time and fry them while you assemble the next 6.
  6. Make sure oil is at 375 degrees and fry each batch for 1 to 2 minutes, till they are a nice golden brown. Remove with slotted spoon and place on paper towels to drain.
  7. Serve with sweet and sour sauce.
