Southwestern Frittata

Ingredients
  • 6 large eggs
  • ¼ cup half and half or milk
  • ½ tsp garlic powder
  • ¼ teaspoon salt
  • Freshly ground black pepper
  • ¼ of a 1 lb chub of pork sausage
  • ½ cup shredded cheddar cheese
  • ½ cup chopped roasted red peppers (I used Mezzetta Roasted Red Bell Peppers)
  • ½ cup diced green chiles
  • ¼ tsp cumin
  • ¼ tsp cayenne
Instructions
  1. Preheat the oven to 375°F.
  2. Grease a rectangular 1.5 qt baking dish (about 8" x 10")
  3. Brown the sausage in a skillet, breaking into crumbles as it cooks. Set aside.
  4. In a bowl, whisk the eggs, milk, garlic, spices, and salt until well combined.
  5. Stir in the red peppers, green chiles, and half the cheese.
  6. Pour into the baking dish. Sprinkle the sausage crumbles evenly over the top, then sprinkle remaining cheese over.
  7. Bake for 20 minutes or until set.
  8. Serve and enjoy!
