- 6 large eggs
- ¼ cup half and half or milk
- ½ tsp garlic powder
- ¼ teaspoon salt
- Freshly ground black pepper
- ¼ of a 1 lb chub of pork sausage
- ½ cup shredded cheddar cheese
- ½ cup chopped roasted red peppers (I used Mezzetta Roasted Red Bell Peppers)
- ½ cup diced green chiles
- ¼ tsp cumin
- ¼ tsp cayenne
- Preheat the oven to 375°F.
- Grease a rectangular 1.5 qt baking dish (about 8" x 10")
- Brown the sausage in a skillet, breaking into crumbles as it cooks. Set aside.
- In a bowl, whisk the eggs, milk, garlic, spices, and salt until well combined.
- Stir in the red peppers, green chiles, and half the cheese.
- Pour into the baking dish. Sprinkle the sausage crumbles evenly over the top, then sprinkle remaining cheese over.
- Bake for 20 minutes or until set.
- Serve and enjoy!
