Full of fresh corn, bell pepper, and, of course, green chiles, this is a sweet hot sour relish that can go on a hot dog or burger or served as a side dish. Note: this is pretty hot. You might want to use half hot, half mild or medium chiles or reduce the amount of chiles.
- 4 ears corn, husked and cleaned
- 2 cups peeled, seeded, coarsely chopped tomatoes (1 lb)
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- ¼ peeled cucumber, chopped
- ½ cup chopped onion
- ½ cup sugar
- 1 cup apple cider vinegar
- 1½ tsp salt
- ½ tsp celery seed
- ½ tsp mustard seed
- ¼ cup diced hot green chiles
- Cut the corn from the cobs, then scrape the cobs with the edge of the knife to remove remaining pulp.
- Drain the tomatoes and cucumber.
- In a large saucepan, mix the corn kernels and pulp, tomatoes, green bell pepper, red bell pepper, cucumber, and onion.
- In a medium bowl, mix the sugar, vinegar, salt, celery seed and mustard seed. Pour over the vegetable mixture in the saucepan. Bring to a boil, then simmer 1 hour.
- Add the green chiles to taste, cook another 10 minutes, then refrigerate until time to serve.
- Garnish with chopped green onions or cilantro and serve.
