Green Chile Soup with Rice

Flavorful and easy, this is a popular dish for family, game day parties, anytime.
Ingredients
  • 2 Tbsp olive oil
  • ¾ cup minute rice
  • 1 quart chicken broth
  • 2 cups water
  • 1 28-oz can whole tomatoes, cut up
  • 6 cloves garlic, minced
  • 1 whole onion, diced
  • 1 Tbsp Lawry's garlic salt
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 2 cups green chiles (from Lulu's), diced
  • ½ lime
  • avocado slices
  • cilantro
Instructions
  1. Sautee rice in olive oil over medium heat until almost golden.
  2. Add 1 quart chicken broth, 2 cups water, and the can of tomatoes. Simmer for 10-15 minutes.
  3. Add remaining ingredients (onion, garlic, garlic salt, pepper, pepper flakes, chiles, and lime) and simmer for about a half hour.
  4. Pour into bowls, garnish with avocado or cilantro, and serve.
