Tomatillo Garlic Guacamole

This has a fresh, tart taste along with the garlic chile heat. The lime is essential for rounding out the flavor.
  • ½ pound tomatillos, about 3-4 medium
  • 3 large cloves garlic
  • 1 tbsp olive oil
  • ¼ cup hot green chiles (or 1 tsp seeded minced jalapeno)
  • 3 large ripe avocados, peeled, seeded and mashed
  • ¼ tsp salt, or to taste
  • 1 tbsp fresh lime juice, about ½ lime, or to taste
  • cayenne
  1. Preheat oven to 400 degrees.
  2. Remove tomatillo husks, wash and coarsely chop or slice.
  3. Put tomatillos and garlic into plastic bag, then pour olive oil on top. Hold the bag shut and shake to coat with olive oil. Then spread on cookie sheet and roast for 10- 15 minutes or until soft.
  4. Place tomatillos, garlic, green chiles, and lime juice in blender or food processor and puree.
  5. Stir the tomatillo mixture into the mashed avocados and add salt, adjusting to taste.
  6. Serve in a small serving bowl and sprinkle with cayenne.
