Easy comfort food with leftover turkey. I always start with very good bread, in this case a good sourdough. Got leftover turkey? Leftover gravy? No? Open up a can of gravy. I used Extra Sharp Cheddar cheese, but any cheese
- Leftover turkey, either pieces or slices
- Turkey gravy
- Mild diced green chiles (I used Select New Mexico)
- Good bread (I used sourdough)
- Cheese (any meltable kind, I used Extra Sharp Cheddar)
- Cut up turkey into pieces, shred it, or use slices (your choice). Use your judgement on how much based on how many sandwiches you want.
- Put turkey in a saucepan and cover with gravy. Heat thoroughly. Use more gravy if you want it really smothered, less to have it barely moist.
- Add about 2 tbsp of diced green chiles per sandwich, less if you use hot chiles, adjust to taste.
- While turkey is heating up, put slices of cheese on the bread and microwave for 30 seconds or until barely melted.
- Spoon turkey mixture on the cheese and put other piece of bread on to make a sandwich.
- Enjoy! Eat with a fork if too soupy.
