Easy comfort food with leftover turkey. I always start with very good bread, in this case a good sourdough. Got leftover turkey? Leftover gravy? No? Open up a can of gravy. I used Extra Sharp Cheddar cheese, but any cheese
Ingredients
  • Leftover turkey, either pieces or slices
  • Turkey gravy
  • Mild diced green chiles (I used Select New Mexico)
  • Good bread (I used sourdough)
  • Cheese (any meltable kind, I used Extra Sharp Cheddar)
Instructions
  1. Cut up turkey into pieces, shred it, or use slices (your choice). Use your judgement on how much based on how many sandwiches you want.
  2. Put turkey in a saucepan and cover with gravy. Heat thoroughly. Use more gravy if you want it really smothered, less to have it barely moist.
  3. Add about 2 tbsp of diced green chiles per sandwich, less if you use hot chiles, adjust to taste.
  4. While turkey is heating up, put slices of cheese on the bread and microwave for 30 seconds or until barely melted.
  5. Spoon turkey mixture on the cheese and put other piece of bread on to make a sandwich.
  6. Enjoy! Eat with a fork if too soupy.
