Chile Cheetos Chicken

Crunchy, cheesy breading and a green chile stuffing makes this a memorable dish for that game day party.
Ingredients
  • 4 cups crunchy Cheetos snacks (or similar)
  • ½ cup grated parmesan cheese
  • ⅓ cup flour
  • ½ tsp salt
  • 1 egg
  • 1 tbsp water
  • 4 boneless skinless chicken breasts
  • ½ cup diced hot Select New Mexico green chiles, drained
  • ¼ tsp garlic salt
Instructions
  1. Preheat oven to 350 degrees. Spray a large baking dish with cooking spray.
  2. Process the Cheetos in your food processor or blender to turn them into crumbs. Mix with the parmesan cheese and pour onto a plate.
  3. Blend the garlic salt with the green chiles and set aside.
  4. Cut each chicken breast in half across the short side, then cut a slit in the middle of each to about ¼ inch from the outside. This creates a pocket for stuffing.
  5. Stuff each half-breast with 1 tbsp of the green chile mixture, being sure to spread it out to fill the pocket.
  6. Beat the egg with the tablespoon of water, then coat each half-breast with flour, then roll in the egg mixture, then coat with the Cheetos crumbs and place on baking sheet.
  7. Cover with aluminum foil and bake 30 minutes. Remove foil and bake another 20 minutes. Test with meat thermometer. If not up to 165 degrees bake another 10 minutes. Cooking time will depend on thickness of the meat.
