Chipotle Crab Dip

An easy, elegant crab dip, ideal for parties. Serve with tortilla chips, pita chips, French bread, whatever...
Ingredients
  • ⅔ cup 505 Chipotle Honey Salsa
  • (or Safeway Chipotle Salsa, or chipotle salsa of your choice)
  • ⅓ cup milk
  • 3 8-oz packages of cream cheese, cubed
  • 16 oz imitation crabmeat, flake style
  • 1 cup thinly sliced green onions
  • ½ cup diced green chiles (either hot or mild will do, depending on desired heat level)
Instructions
  1. Stir milk and salsa together, then pour into a crockpot coated with nonstick cooking spray.
  2. Stir in cream cheese, crab, onions, and chiles.
  3. Cover and cook on low for 3 hours, stirring every 30 minutes. Add additional chiles if you wish to adjust heat level.
  4. Serve with French bread, crackers, or tortilla chips.
Notes
No crockpot? You can simmer this, covered, over a double boiler. Or you can microwave on a low power level, let it sit for a half hour, then microwave again just to heat it up enough to serve. The key is to use low heat with this - you don't want it to scorch or boil, which will cause ingredients to separate rather than blend.
