This is a robust, flavorful dip ideal for game day parties! It has a nice bacon flavor, spiciness, and a bit of tang.
- 2 lbs Velveeta Cheese (or similar)
- 2 10-oz cans Rotel diced tomatoes & chiles
- 1 cup sour cream
- 1 tsp horseradish sauce
- ½ lb bacon
- ½ cup diced green chiles
- Cut Velveeta into about 1 inch cubes and
- place in crockpot with 2 cans Rotel tomatoes & chiles.
- Turn crockpot on high. Stir at least every 10 minutes
- for the next hour to blend.
- To speed up this process, melt the cheese and tomatoes
- together in a saucepan over medium high heat, stirring
- frequently, for 10 to 15 minutes. Then transfer to crockpot.
- Meanwhile, cook bacon in frying pan until crisp or
- semi-crisp. Place on paper towels to drain.
- Stir in horseradish sauce and green chiles, stirring
- to blend well. Then crumble bacon and stir into the mixture.
- Set the crockpot to warm, and serve in crockpot
- with a giant bowl of tortilla chips.
