Bacon Chile Queso

This is a robust, flavorful dip ideal for game day parties! It has a nice bacon flavor, spiciness, and a bit of tang.
Ingredients
  • 2 lbs Velveeta Cheese (or similar)
  • 2 10-oz cans Rotel diced tomatoes & chiles
  • 1 cup sour cream
  • 1 tsp horseradish sauce
  • ½ lb bacon
  • ½ cup diced green chiles
Instructions
  1. Cut Velveeta into about 1 inch cubes and
  2. place in crockpot with 2 cans Rotel tomatoes & chiles.
  3. Turn crockpot on high. Stir at least every 10 minutes
  4. for the next hour to blend.
  5. To speed up this process, melt the cheese and tomatoes
  6. together in a saucepan over medium high heat, stirring
  7. frequently, for 10 to 15 minutes. Then transfer to crockpot.
  8. Meanwhile, cook bacon in frying pan until crisp or
  9. semi-crisp. Place on paper towels to drain.
  10. Stir in horseradish sauce and green chiles, stirring
  11. to blend well. Then crumble bacon and stir into the mixture.
  12. Set the crockpot to warm, and serve in crockpot
  13. with a giant bowl of tortilla chips.
