Texas Quinoa

Nutritious and full of different flavors and textures, Texas Quinoa is a robust dish that makes a good side dish or a main entree.
Ingredients
  • 2 cups water
  • 1 cup red quinoa (can use regular quinoa)
  • ¾ cup green chili (hot or mild)
  • ¼ teaspoon chili powder
  • ¼ teaspoon ground coriander
  • ¼ teaspoon ground cumin
  • ½ teaspoon dry cilantro
  • ½ teaspoon dry parsley
  • 1 cup diced tomatoes
  • 1 cup cooked black beans (can use canned)
  • 1 cup canned hominy kernals
  • 2 tablespoons fresh lemon juice
  • lettuce leaves for individual dishes
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
Instructions
  1. Bring water and quinoa and spices to a boil in a large saucepan. Cover, reduce to a simmer and cook for 10 minutes.
  2. Turn heat off and let set for another 5 minutes. Fluff with a fork.
  3. Add, chili, tomatoes, beans, hominy, lemon juice, then heat thoroughly while stirring.
  4. Spoon mixture over individual servings with lettuce leaves and top with a top with shredded cheese and a dollop of sour cream
