Nutritious and full of different flavors and textures, Texas Quinoa is a robust dish that makes a good side dish or a main entree.
- 2 cups water
- 1 cup red quinoa (can use regular quinoa)
- ¾ cup green chili (hot or mild)
- ¼ teaspoon chili powder
- ¼ teaspoon ground coriander
- ¼ teaspoon ground cumin
- ½ teaspoon dry cilantro
- ½ teaspoon dry parsley
- 1 cup diced tomatoes
- 1 cup cooked black beans (can use canned)
- 1 cup canned hominy kernals
- 2 tablespoons fresh lemon juice
- lettuce leaves for individual dishes
- ½ cup sour cream
- ½ cup shredded cheddar cheese
- Bring water and quinoa and spices to a boil in a large saucepan. Cover, reduce to a simmer and cook for 10 minutes.
- Turn heat off and let set for another 5 minutes. Fluff with a fork.
- Add, chili, tomatoes, beans, hominy, lemon juice, then heat thoroughly while stirring.
- Spoon mixture over individual servings with lettuce leaves and top with a top with shredded cheese and a dollop of sour cream
