A classic, simple New Mexico green chili that highlights that roasted green chile flavor. This won 1st place at the 2014 Denver Chili Fest.
- 1 lb diced pork
- 1 15 oz can diced tomatoes
- 1½ cups diced green chiles (about 10-14)
- ¾ cup diced onion (about ½ medium onion)
- 4 tbsp garlic salt (a bit at a time, to taste)
- 1 tbsp chopped cilantro
- 4 cups water
- Brown pork in a large skillet.
- Add remaining ingredients, setting half the garlic salt aside, and simmer, covered, for 2 hours.
- Slowly add remaining garlic salt, adjusting to taste until you reach optimal level.
- Enjoy!
