This classic green chili has plenty of tomatillo and green chiles with just the right amount of bacon to give a robust and satisfying flavor.
- 3 lbs pork, cubed
- ½ lb bacon, diced
- 1 large white onion, coarsely chopped
- 1 large yellow onion, coarsely chopped
- 10 cloves garlic, minced
- 5 Roma tomatoes, peeled and diced
- 6 cups pureed tomatillos
- 3 lbs green chiles, roasted, peeled, cleaned, coarsely chopped
- 8 cups chicken stock
- cumin to taste
- cornstarch for thickening
- salt and pepper to taste
- In a large stock pot, fry bacon.
- Add onions and garlic, saute until onions soften.
- Add cubed pork, season with salt and pepper and brown.
- Deglaze pan and add tomatillows, tomatoes, and green chiles and allow to simmer for 20 minutes.
- Add chicken stock and continue to simmer until pork is tender (1-2 hours), adding cumin to taste.
- Thicken with cornstarch as desired.
