Classic Pork Green Chili

This classic green chili has plenty of tomatillo and green chiles with just the right amount of bacon to give a robust and satisfying flavor.
Ingredients
  • 3 lbs pork, cubed
  • ½ lb bacon, diced
  • 1 large white onion, coarsely chopped
  • 1 large yellow onion, coarsely chopped
  • 10 cloves garlic, minced
  • 5 Roma tomatoes, peeled and diced
  • 6 cups pureed tomatillos
  • 3 lbs green chiles, roasted, peeled, cleaned, coarsely chopped
  • 8 cups chicken stock
  • cumin to taste
  • cornstarch for thickening
  • salt and pepper to taste
Instructions
  1. In a large stock pot, fry bacon.
  2. Add onions and garlic, saute until onions soften.
  3. Add cubed pork, season with salt and pepper and brown.
  4. Deglaze pan and add tomatillows, tomatoes, and green chiles and allow to simmer for 20 minutes.
  5. Add chicken stock and continue to simmer until pork is tender (1-2 hours), adding cumin to taste.
  6. Thicken with cornstarch as desired.
