| Chile Cheese Potato Bites |

Easy and tasty appetizer made with little new potatoes, spices, cheese and chiles. Great for a party!
- 12 new potatoes about the size of a ping pong ball
- ¼ tsp Kosher salt
- ⅛ tsp ground cumin
- ⅛ tsp fresh ground black pepper
- ¼ cup grated sharp cheddar cheese
- 2 tbsp grated Parmesan cheese
- 2 tbsp diced green chiles
- optional: additional grated cheddar cheese to melt on top
- Preheat oven to 450 degrees. Lightly grease a baking dish or spray with cooking spray.
- Put the potatoes in a small pot, cover with water, cover with a lid, and bring to a boil. Cook over medium heat for about 20 minutes or until soft when pricked with a fork.
- Blend salt, cumin and pepper and set aside.
- Blend cheddar cheese, Parmesan cheese, and chiles and set aside.
- Remove cooked potatoes, slice each potato in half, and use a spoon to scoop out the inside of each potato into a small bowl.
- Mash the potato that you scooped into a bowl, then blend with the spices.
- Blend in the cheese and chile mixture.
- Spoon the potato mixture back into the potato halves, pressing down lightly.
- Place each potato half on the greased baking dish, topping with additional grated cheese if you wish.
- Bake for 10 minutes or until hot and cheese melted.
- Serve & enjoy!
