Chile Cheese Potato Bites

Easy and tasty appetizer made with little new potatoes, spices, cheese and chiles. Great for a party!
Ingredients
  • 12 new potatoes about the size of a ping pong ball
  • ¼ tsp Kosher salt
  • ⅛ tsp ground cumin
  • ⅛ tsp fresh ground black pepper
  • ¼ cup grated sharp cheddar cheese
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp diced green chiles
  • optional: additional grated cheddar cheese to melt on top
Instructions
  1. Preheat oven to 450 degrees. Lightly grease a baking dish or spray with cooking spray.
  2. Put the potatoes in a small pot, cover with water, cover with a lid, and bring to a boil. Cook over medium heat for about 20 minutes or until soft when pricked with a fork.
  3. Blend salt, cumin and pepper and set aside.
  4. Blend cheddar cheese, Parmesan cheese, and chiles and set aside.
  5. Remove cooked potatoes, slice each potato in half, and use a spoon to scoop out the inside of each potato into a small bowl.
  6. Mash the potato that you scooped into a bowl, then blend with the spices.
  7. Blend in the cheese and chile mixture.
  8. Spoon the potato mixture back into the potato halves, pressing down lightly.
  9. Place each potato half on the greased baking dish, topping with additional grated cheese if you wish.
  10. Bake for 10 minutes or until hot and cheese melted.
  11. Serve & enjoy!
