A festive, yet simple rice dish perfect to serve with any green chili.
- 2 cups water
- 1 cup long grain white rice
- ¼ tsp salt
- 1 tbsp butter
- 1 tsp lime zest
- 2 tbsp fresh lime juice
- ⅓ cup chopped cilantro
- Bring water to a boil; stir in rice, salt, and butter.
- Cover, reduce heat to low, and simmer until rice is tender, about 25 minutes.
- Turn off heat and let set 5 minutes.
- Stir in lime zest, lime juice, and cilantro just before serving.
